What exactly is a French Roast? Though often used to describe any coffee on the darker side, we use this name to precisely refer to coffee beans that have passed the “second crack” in the roasting process. When roasting coffee, you can hear a soft crackling sound that signals the release of steam – any remaining moisture – from the beans. But when you hear this crackling for a second time later in the roast, the beans have reached a high enough temperature that oils, rather than moisture, start releasing from the beans. A truly hot cup of joe!
